What Is Emulsifier ?





Emulsion in food is mixed water and oil.Normally it not mixed together and without the emulsifier it will be separated.
For example the mayonnaise it consist water and oil.Emulsifier will remained from separated together.

What is emulsion actually?

Two (2) type of emulsion :

1) Emulsion oil in water is content small droplet of oils separated in water (exp: ice cream)

2) Emulsion water in oil is content water droplet separated in oil (exp: margarine)

Emulsifier in food

Purpose use in food :
1) Make food more attractive
2) Effect on food structure and texture
3) Preserve the freshness and quality of food

Food that contain emulsifier :
- Biscuit
-Chewing Gum
-Toffee
-Peanut butter
-Soft Drink
-Caramel
-Chocolate
-Creamer
-Frozen dessert

Origin of Emulsifier :

Monoglycerides is the common emulsifier used in foods.
It produced by reaction fatty acid with glycerol.
Natural resource like animal fat and vegetable fat common source to produce emulsifier.
Other example of emulsifier are soy lecithin (E322) and Mono- and di – glycerides (E 471)
The issue is if the emulsifier from animal origin we have to make sure animal source is halal. So muslim consumer must be alert if emulsifier used in food product.
